This is one of the yummiest ice creams/ mousses ( depending on how long you freeze it! ) to make,
Strawberry Mousse Ice Cream,
*4 egg whites
*1 punnet of Black Forest Farm Strawberries
*1 cup of sugar
*1/3 cup of water
Pour water and sugar into a small saucepan and bring to boil, lower heat and stir until sugar has dissolved, continue to stir slowly until liquid becomes slightly thicker, remove from heat.
In a bowl whisk egg whites until firm peaks then pour in sugar syrup, continue to whisk until mixture is glossy and thick.
In a bowl crush the strawberries using a fork of masher, drain excess liquid with paper towels and then fold into egg white mixture.

Some years ago when we bought our farm and decided to experiment with using our fruit and vegetables to make preserves and relishes.
At the time we never assumed it would become our business! but since stirring that first pot, we became addicted to making mouth watering and award winning jams.
